vegetable and mixed bean soup Recipe

Ingredients 1 large potato, diced
1 large carrot, diced
1 large leek, chopped
1 large zucchini, diced
1- 2 pieces pumpkin, diced
2 celery stalks, diced
5 large mushrooms, diced
1/2 cup dried chick peas
1/2 cup lentils
1/2 cup cannellini beans
salt and pepper
1 medium onion, grated
Instructions Place the beans in a bowl filled with water and leave overnight or for 30 minutes.
Grate the potato and carrot and take the skin off the onion. Instead of vegetable stock place a pot of water on the stove and place the vegetable skins in the pot and boil for 10 minutes. Then stain in another pot and place on stove and put in vegetables beans and salt and pepper and cook for 1 1/2 hours or until vegetables are tender.
