Mixed vegetable soup Recipe

Ingredients 1 onion
1/4 cabbage
3-4 celery sticks
3-4 carrots
1/2 chilli (by choice)
1 potato
3 teaspoon cooking oil
1/4 -1/2 cup vegetable stock (from supermarket)
This recipe is a combination of vegetables from fridge/pantry with some from supermarket for variety of taste and strength (consistency) of soup
Instructions Peel and cut carrots and potato into pieces
Cook them in microwave in microwave bowl with little water on low heat for few minutes
Peel and cut onion into thin slices
Heat cooking oil in saucepan and add onion
Cook till golden brown
Wash and cut cabbage, celery into pieces and microwave it in microwave bowl with little water till soft
Add a quarter of cooked carrot, potato, celery, cabbage to saucepan
Place the rest in blender jar with chilli (optional) and make a puree
Add this puree and vegetable stock (liquid packet/tetra pak from supermarket) to the saucepan
Warm it on low and serve with dash of lemon juice and ground pepper on top
