Easy lentil soup Recipe

Ingredients 2 cups brown lentils
4 / 5 bay leaves
2 onions diced
3 / 4 cloves garlic chopped finely
Teaspoon of oregano
1/4 cup olive oil
salt & pepper
can of chopped tomatoes
vinegar
Instructions Remove any discoloured lentils
Wash & soak lentils in tepid water about 15 mins (whilst soaking prepare other ingredients) then drain
Add to a large saucepan & cover with 6 / 8 cups of water
Add teaspoon each of salt & pepper
Add onions, garlic, olive oil & bay leaves.
Bring to boil about 10 mins then lower heat & simmer about 20 mins
Add tomatoes & dried oregano, bring to boil & simmer about 5 mins till ready
Don’t forget to add a little vinegar before serving, the vinegar really lifts the taste of the soup.

Use this as a basic recipe & add to it. I often use a mix of green, brown, red & orange lentils. Mung beans are nice in it too. You can also add vegies, eg carrots, celery. Can also use a veg stock cube if you like
