INGREDIENTS
1 1/2 cups of wild rice
2 carrots, sliced into 1/2 inch rounds
1/4 cup of raisins
1/4 cup of pecans
zest and juice from 1 orange
1/4 cup of chopped parsley
4 tbsp of melted vegan margarine
salt and pepper, to taste
PREPARATION:
- Add wild rice to a saucepot with about 4 1/2 cups of water, and cover.
- Add wild rice to a saucepot with about 4 1/2 cups of water, and cover.
- While the rice is cooking, simmer the carrots for about 5-7 minutes until they are tender.
- In a large bowl combine the raisins, pecans, orange zest and juice, parsley, melted margarine and salt and pepper.
- Add the wild rice and carrots to the bowl and mix to combine.
