Carrot Pecan Wild Rice

INGREDIENTS
1 1/2 cups of wild rice
2 carrots, sliced into 1/2 inch rounds
1/4 cup of raisins
1/4 cup of pecans
zest and juice from 1 orange
1/4 cup of chopped parsley
4 tbsp of melted vegan margarine
salt and pepper, to taste

PREPARATION:

  1. Add wild rice to a saucepot with about 4 1/2 cups of water, and cover.
  2. Add wild rice to a saucepot with about 4 1/2 cups of water, and cover.
  3. While the rice is cooking, simmer the carrots for about 5-7 minutes until they are tender.
  4. In a large bowl combine the raisins, pecans, orange zest and juice, parsley, melted margarine and salt and pepper.
  5. Add the wild rice and carrots to the bowl and mix to combine.
