Berry Muffins Recipe

Ingredients 2 cups self-raising flour
½ cup sugar
1 tspn egg replacer (mixed with 2 Tbspn water)
1 cup soymilk, low fat
4 Tbspn melted Nutellex Lite
1 ½ cups frozen mixed berries, lightly thawed in microwave
OR 1 punnet strawberries, chopped
Instructions 1. Preheat oven to 200C
2. Lightly grease with Nuttelex a 12
capacity muffin tin
3. Mix flour and sugar together
4. Add soymilk, egg replacer and melted
butter and mix lightly
5. Stir in berries (do not overmix �&qt; mixture
should be lumpy)
6. Spoon into muffin tin, dividing equally
7. Bake for 20-25 mins, checking if ready
by inserting a skewer until it comes out
clean
8. Leave to cool in tin for 5 mins before
turning onto wire rack to cool
