Some vegetarians give justification for vegetarianism by wrapping it in spiritual and superstitious beliefs. The Humanist Vegetarian Group rejects these beliefs and seeks to promote a rational case for Vegetarianism.
Most vegans I know are ethical vegans with rational case for Veganism, while most vegetarians as you write are wrapped into spiritual and superstitious beliefs. (And I think it's good that they are still vegetarians not vegans, overwise they will try to generate some nutrients, for example B12 by spiritual means and be hurt)
