Tofu Questions

we can discuss all tofu related questions in this topic. Here is my question: Usually there is some ingredient used to make tofu from soy milk that separates the proteins from the liquid. What happens when I leave the soy milk for a couple of days and it happens by itself? without any additional ingredient? Is this kind of tofu edible or it is already spoiled and should be thrown? thank you
