| Ingredients (use vegan versions): 1 medium cucumber 2 cloves fresh garlic 1 small onion 2 tablespoon vinegar of choice fresh parsley Directions: Grate garlic and add to vinegar in small bowl to steep. Chop the onion finely. Peel alternate 2 inch strips off cucumber skin and dice to personal choice. Mix all ingredients, top with parsley. Chill before serving. Serves: 2 Preparation time: 5 minutes |
