Chickpea Avocado Salad

Ingredients (use vegan versions): 1 ripe avocado 16 0z can of chickpeas banana peppers yellow or orange bell pepper diced half a red onion diced vegan bacon bits cider vinegar (2 tablespoons) salt & pepper to taste Directions: Drain and rinse the chickpeas in cold water. Slice the avocado into medium sized chunks. In a medium bowl combine the chickpeas, avocado, bell pepper, and banana peppers. I used mild banana peppers from a jar and added 1/4 cup. Add the cider vinegar, salt and pepper and toss. Top with the imitation bacon bits. Serves: 4 or so Preparation time: 10 min.
